Parmesan Pork Chop Sandwich

Serving Size: 4

Ingredients:
4 thin cut pork chops, boneless
3 eggs, lightly beaten
3 tablespoons milk
1 1/2 cups bread crumbs
1/2 cup fresh Parmesan cheese, grated
sea salt, to taste
2 tablespoons olive oil
4 garlic cloves, minced
1 large tomato, sliced
4 lettuce leaves
8 slices whole wheat bread, toasted

Directions:
1. Preheat oven to 325 degrees.
2. Combine eggs and milk in a small bowl. Combine bread crumbs, Parmesan cheese and salt in another bowl.
3. Place olive oil in a large skillet over medium heat. Add garlic and cook until lightly browned. Remove garlic.
4. Dip each pork chop into egg mixture, then dredge through bread crumb mixture. Place coated pork chops in the skillet, cook on each side for 5 minutes.
5. Place the skillet and pork chops in the oven and cook for 20 minutes or until internal temperature is 160 degrees.
6. Remove and let cool. Place on toasted bread along with tomato and lettuce. Enjoy!
